1.) Snowman Chocolates:
To make snowman chocolate, you will need 1 3/4 lb., white chocolate (chopped), 2 oz. orange candy melts, 2 oz. semisweet chocolate, hot chocolate for serving.
In a microwave melt the white chocolate in a large bowl, keep stirring in between until its smooth. Pour it into an ice cube tray and freeze until firm for at least up to 24 hours. Now in separate small bowl microwave orange candy and stir in between until smooth. Put it into a small resealable plastic bag. In another small bowl, microwave semisweet chocolate just the way you melted the previous ones and transfer to a small resealable plastic bag. Invert set chocolate cubes and cut corners off plastic bags. Use chocolate to pipe eyes, noses, and mouths.
2.) Peppermint Cream Cheese Cupcakes:
1 box of any chocolate cupcake mix and ½ teaspoon peppermint extract. To make its frosting you will need, 8 oz cream cheese, ¾ whipped vanilla frosting, ¼ cup powdered sugar, ½ teaspoon peppermint extract, 2 finely crushed candy canes, red food coloring, 2 candy canes(crushed).
Preheat oven at 350 degrees, open package and set small chocolate filling packet aside. Place the filling into a small bowl and stir in ½ teaspoon of peppermint extract. Prepare cupcakes and cool them on wire rack. If you haven’t added the filling, scoop out a piece of the baked cupcake using cupcake corer. Add filling into the cavity and replace the piece scooped out. For frosting, beat cream cheese and pepper min extract until soft, stir in whipped vanilla frosting, crushed candy canes and refrigerate for 20 minutes at least. Pipe frosting on each cupcake.
3.) Candy Cane Crunch Milkshake:
You will need 4 large scoops of vanilla ice cream, 1 cup cool whip, frozen. ¼ cup milk, 3 regular sized candy canes, ¼ cup chocolate chips
Combine all ingredients in a blender and blend for 20 seconds until milkshake consistency. Pour into cups and top with additional cool hip and crush candy canes for garnish.
4.) Creamy Frozen Raspberry Mousse:
You will need 1 ¼ c. Greek yogurt or quark, 1/4 c. confectioners sugar, 2 tsp. fresh lime juice, 8oz. frozen raspberries, 2 tbsp roasted unsalted almonds (chopped).
In a bowl combine quark, confectioners’ sugar and fresh lime juice fold in frozen raspberries until they leave pink streaks. Divide among bowls and sprinkle with chopped almonds.
5.) Lemon Posset:
You will need 1/2 c. superfine sugar, 2 ½ c. heavy cream, 3 tbsp lemon juice, 2tsp. grated lemon zest, 2 tbsp lemon juice, blueberries for serving.
Heat sugar in a saucepan and 2 cups of heavy cream bring to a simmer. Remove from heat, add lemon juice and lemon zest, lemon juice. Divide among four-oz jars and refrigerate until set about 2 hours. Whip ½ cup heavy cream to medium-stiff peaks. Spoon on top and sprinkle blueberries on top with lemon zest.
